Regulatory Framework
Silicone release agents used in food processing operate under a layered regulatory framework. FDA 21 CFR 178.3570 permits dimethylpolysiloxane (PDMS) as a release agent in food contact at a maximum carryover of ≤10 ppm in the finished food. German LFGB §31 maintains a positive list; silicone oils and emulsions are assessed separately and must pass individual migration testing. NSF 51 certifies food equipment materials including silicone release agents used on food-contact surfaces and is commonly required by institutional food equipment purchasers.
Most PDMS food-grade grades carry Kosher and Halal certification from major certifying bodies, satisfying requirements in export markets across the Middle East and Southeast Asia.

Application in Bakery and Confectionery
Bread tin release is typically achieved with 2–5 mg/dm² PDMS emulsion applied by spray or roller coater before each bake cycle. Chocolate molds require a thin wipe of 350 cSt PDMS oil to achieve perfect gloss transfer and clean demolding at 15–20 °C. Waffle irons and wafer plates operating at up to 200 °C are best served by PDMS oil or PTFE-silicone blends rated for continuous high-temperature operation.
Dosage control is critical: effective release is achieved at 0.5–2.0 mg PDMS per dm² of mold area. Excess application beyond this range causes surface defects in baked goods — oily surfaces, reduced crust browning, and gloss irregularities in chocolate. Automated spray systems with timed dosing heads are standard in high-throughput lines.
Silicone Rubber Baking Molds
Platinum-cured liquid silicone rubber (LSR) and high-temperature vulcanizate (HTV) silicone rubber molds are certified to FDA 21 CFR 177.2600, LFGB, and are BPA-free. Their thermal range of −60 °C to +230 °C makes them suitable for oven baking, freezer storage, and microwave reheating in a single vessel. The inherently non-stick silicone rubber surface eliminates the need for added release oil in many confectionery and bread applications, reducing labor and eliminating oil residue concerns.
Cleaning is dishwasher-safe; abrasive scrubbers must be avoided as surface abrasion degrades the non-stick layer and increases mold porosity over time.
